A bright and mineral-driven expression of Chardonnay, “Ex Metallum” is a pure, stainless steel-fermented take on estate-grown Mt. Eden clone fruit. The nose is lifted and zesty, with grapefruit rind, lemon zest, and green apple layered over subtle notes of peach blossom, thyme, and flint. On the palate, vibrant acidity drives flavors of limeade, lemon peel, and nectarine, with a crisp, saline edge. This is a porch-pounding, refreshingly crisp Chardonnay best served well-chilled, designed for immediate enjoyment but with enough tension and structure to hold your attention.
