2023 Gamay Noir Carbonic
Tasting notes
Our 2023 Gamay ‘Carbonic’ undergoes carbonic maceration, a fermentation method that enhances its vibrant fruit character and softens tannins. The nose offers aromas of sour cherry, pomegranate, thyme, and a touch of menthol. On the palate, flavors of cranberry, red currant, and stewed plum are complemented by hints of clove, dried herbs, hibiscus, and star anise. With its complex, aromatic profile and smooth finish, this wine beautifully balances freshness and depth.
Production notes
Fermented carbonically in a stainless steel tank, 24 days total time on the skins. Pressed off to age for 8 months in one clay Amphora (85%) and one stainless steel keg (15%).
