Tasting notes
Aromas of green apple, lemon rind and honeysuckle lead to crisp pear, wet river rock and zested lemon on the palate. Textured but refreshing, with medium acidity and a clean, mineral finish.
Production notes
Estate Chardonnay (Clone: Mt Eden Clone) was fermented and aged in a concrete egg vessel. An additional 7 months was spent aging on the lees in the same concrete vessel. Bottled unfined and unfiltered.

Fermented in a concrete egg, the Ab Ovo is perplexing in the best way possible. Texture-wise, the wine feels creamy on the palate. But the wine's acidity vibrates like the field of an electric football game.
